Ten million scoops of ice cream moved through Insomnia Cookies locations last year, a milestone that underscores the bakery chain's transition into the nation's largest company-owned scoop shop network. While famous for late-night warm cookies, the Philadelphia-based brand is now pushing its proprietary ice cream line into the spotlight.

Since launching its proprietary Cookies IN Ice Cream collection in 2022, the company has expanded the offering to every one of its 360-plus U.S. bakeries. Founder and CEO Seth Berkowitz aims to shift consumer perception, encouraging customers to look beyond the cookies and explore a menu where signature treats are folded directly into premium ice cream bases. The top performers in 2025 were the Cookies 'N Dream, Cookie D'ough, and Caramellionaire varieties.

To drive awareness of this expansion, the company is marking National Ice Cream Day with a weekend promotion. From July 17 through July 19, customers spending $5 or more at participating bakeries or via local delivery will receive a free two-scoop cup. While the promotion is not valid for pickup orders, it highlights the brand's intent to capture a larger share of the dessert market through its delivery-heavy business model.
