Primal Eats Overhauls Menu and Launches Wisconsin's First Smart Vending
Voted the top BBQ destination in the 2026 Best of the Bay Community Choice Awards, Gillett-based Primal Eats has overhauled its entire culinary operation. The restaurant has eliminated seed oils and corn syrup, pivoting to premium European flours and grass-fed proteins to redefine its Texas-style menu offerings.

The restaurant, owned by Scott and Sally Follett, replaced all seed oils with pure beef tallow and MCT oil, while sourcing prime-grade beef wet-aged for 30 days. These structural changes extend to a newly expanded gluten-free menu, now featuring over 40 items including pizza and a signature Friday night fish fry. By shifting to unbleached, additive-free flours and locally sourced Wisconsin potatoes, the kitchen aims to prioritize cleaner nutrition without sacrificing traditional BBQ textures.
Beyond the dining room, the business has successfully scaled its retail presence. After two years of development, Primal Eats launched a line of grass-fed brisket meat sticks, now shipping nationwide. To increase accessibility, the brand secured the region's first authorization for a self-service smart vending machine. Located at 5383 CTH-R in Gillett, the Grab & Go unit operates daily from 5 a.m. to 10 p.m., offering a selection of the restaurant's scratch-made products alongside items from other local Wisconsin vendors.
