Bethany Hipwell Joins Prosecco DOC for Final 2026 Residency

With the United Kingdom consuming over 100 million bottles annually, the Prosecco DOC Consortium is closing its 2026 Chef Residency program by hosting British culinary talent. Head Chef Bethany Hipwell of The Two Pigs will lead a series of masterclasses in Milan to bridge contemporary British cuisine with Italian tradition.

The residency begins with an immersive tour of the Prosecco DOC region from October 6 to 8, where Hipwell will examine local viticulture and production. Following this, she will transition to the House of Mediterraneo in Milan from October 9 to 12. There, she will mentor young hospitality professionals through workshops focused on menu development, ingredient refinement, and British gastronomic techniques. The program concludes with an invitation-only dinner designed to showcase the intersection of these two distinct food cultures.

Hipwell brings a decade of experience from the Michelin-starred Hambleton Hall, where she served as Senior Sous Chef under Aaron Patterson. Since taking the helm at The Two Pigs, she has earned two AA Rosettes and a spot in the Estrella Damm Top 50 Gastropubs list. Her presence in Milan marks the final installment of a year-long initiative that previously visited Brazil, South Korea, and Canada.

Giancarlo Guidolin, President of the Consortium, emphasized the strategic importance of the UK market, which accounts for approximately 20% of the brand's total exports. Following the record-breaking production of 667 million bottles in 2025, the Consortium views this exchange as a vital tool to maintain its status as a global benchmark for Italian lifestyle.
