Prosecco DOC Opens 2026 Residency to Emerging Global Chefs

Ten aspiring culinary professionals will soon gain a seat at the table in Milan, as the Prosecco DOC Consortium launches its 2026 Chef Residency. The program, which pairs young talent with internationally acclaimed mentors, aims to bridge regional viticulture with global gastronomy through hands-on collaboration at the House of Mediterraneo.

The initiative offers selected participants an immersive experience focused on the intersection of wine, hospitality, and culinary technique. Working in partnership with the Maestro Martino Food Academy, residents spend their time refining original dishes that highlight the versatility of Prosecco DOC. The program culminates in a collaborative multi-course dinner, providing a high-pressure environment for chefs to apply their newly acquired skills.

Giancarlo Guidolin, President of the Consortium, views the residency as a strategic investment in the next generation of industry leaders. By fostering these connections, the organization aims to cultivate ambassadors who understand the nuances of the region’s signature sparkling wine. Previous editions have hosted talent from Brazil and South Korea, and the upcoming schedule highlights Canadian and British influences under the guidance of chefs Dmetrio Sinclair and Bethany Hipwell. The open-application program remains free of charge for successful candidates.
