Starting September 14, 2026, Win Son Bakery is highlighting the new flavor at its Brooklyn and Manhattan locations through two signature items: a breakfast sandwich featuring egg and cheese on a scallion pancake, and a Taiwanese-style Fan Tuan sticky rice roll. The partnership celebrates the long-standing connection between the SPAM brand and Asian American culinary traditions.

For those unable to visit the bakery, the brand has released the breakfast sandwich recipe on its official website. The launch also includes a streetwear-inspired merchandise capsule—comprising a T-shirt, hat, and tote bag—available through the Win Son Bakery website and in-store. Stephanie Swift, brand manager for SPAM, noted that the new variety leverages one of the industry's fastest-growing flavor trends, while chef Trigg Brown described the collaboration as a natural extension of the food served at his cafes.
