PS Seasoning and Pro Smoker Expand Operations Ahead of AAMP Convention
As independent meat processors descend upon Milwaukee for the American Association of Meat Processors convention this week, Wisconsin-based PS Seasoning and Pro Smoker are shifting their focus toward a unified future, highlighting a major corporate expansion and the launch of a new parent organization, Dervati.

The companies, which share nearly 50 years of history in the meat industry, are leveraging the July 9–11 event to showcase their integrated approach to manufacturing and flavor development. Under the newly established Dervati umbrella, the entities are scaling their infrastructure, most notably through the recent groundbreaking of a 264,000-square-foot corporate headquarters and innovation campus in West Bend, Wisconsin, scheduled to open in mid-2027.
Beyond physical expansion, the firm is debuting its 2026 Commercial Flavor Collection, featuring trend-focused profiles like Birria Snack Stick and Pesto Sausage. CEO Joe Hanni noted that the move to unify the brands is intended to streamline product development for clients, allowing processors to transition from initial concept to the retail meat case through a single partner. To support this, the company has bolstered its national sales force with regional representatives tasked with providing localized technical service. Attendees at the Baird Center can visit booth #701 or participate in guided tours of the company’s existing Wisconsin facilities to observe their thermal processing and R&D operations firsthand.
