Saitama Prefecture Launches Global Campaign for Sayama-cha Tea
Thirty kilometers from the neon bustle of central Tokyo, the Sayama Hills are cultivating a different kind of intensity. Saitama Prefecture has unveiled a new promotional video and brochure designed to introduce the world to Sayama-cha, a traditional green tea defined by extreme climate swings and multigenerational craftsmanship.

The secret to the tea’s reputation as one of Japan’s three finest varieties lies in the harsh environment of the Sayama Hills. Temperatures here fluctuate wildly, plunging to minus 10 degrees Celsius in winter and spiking to 35 degrees Celsius in summer. This stress forces the tea plants to thicken their leaves, accumulating a deep, concentrated umami that distinguishes the harvest. Local producers further enhance this profile using 'Sayama-bi-ire,' a signature roasting technique that balances the leaves' natural depth with a mellow sweetness.
Beyond the climate, the prefecture is banking on the personal legacy of its farmers. Most estates operate as family businesses, where expertise is passed down through generations. These farmers manage every stage of production—from the initial cultivation to the final retail packaging—allowing them to refine the flavor profile of their Sencha with each passing season. By digitizing this heritage through new media, Saitama aims to position the tea not merely as a commodity, but as a ritual of mindfulness, intended to soothe the modern mind from the first pour to the final drop.
